I play an acoustic kit and I'm using a Behringer mixer with mics. I'm looking to use Bluetooth earbuds when I play, but I cant find any options that wont produce latency. I've tried a few different transmitters/receivers in conjunction with different sets of earbuds, but they all produce the same result. Any recommendations on what to do?

you'd be better off getting a dedicated IEM setup. i have the thomann IEM 75 transmitter/receiver and i use some 5 driver universal IEMs, and i get no latency at all.

Bluetooth is a terrible choice for monitoring. If you are lucky you might get down to about 35ms of latency but more likely you will get 100-300 ms of latency. Bluetooth was never intended to be in real time.
btw ... about 12ms of latency is where most prople would have difficulty keeping in time. Analog wireless is essentially latency free while all digital systems have some latency (good ones at about 2ms). Digital systems will have much better fidelity and lower noise compared to analog systems. Otoh wired systems will not have any latency (when used with analog mixers), top fidelity and low noise not to mention lower cost.
