Innvervisions by Stevie Wonder is also great!
I know they're not instrumentals, but there are a lot of instrumental breaks and solos and whatnot, plus the drumming on almost every song on all of those albums is superb. Stevie Wonder swings and grooves his ass off and plays the tastiest fills and parts.

We did a cool song the other night that I thought was fun to play....Locomotive Breath by Jethro Tull. I'm playing it on guitar too on my own.
Then after that we did a CCR medley. You can do about 6 or 7 of their songs with the same three chords. So we just jumped around from song to song. We'd start with Green River, somewhere in there was Run Through the Jungle and Susie Q, amongst others. It was cool.
