Type of heads for a new kit

I just got a new Gretsch Catlina Maple. I need to get new heads for my toms, and i dont know what i should get.

I play mostly rock, metal, and progressive. I'm looking for good attack and something that sounds great during recording and during concerts. I dont really know a difference between 1-ply and 2-ply, but any insight on my dilemma would be awesome!
 
On the same kit I've been happy with Emperor batters over Ambassador resos (G2 over G1 if you're an Evans user) on the toms and PS3's on both sides of the kick.

1 and 2 ply heads are basically as stated. A 1 ply head is commonly a 10mil thick film of mylar, whereas a 2 ply head is 2 layers of 7 or 7.5mil thick mylar. I find 2 ply batters slightly more focused and promote less overtones. They also tend to be a little more durable than a single ply head.
 
Use Hydraulics for Recording! I did, and it sounds fantastic - Unbelievable! Im in the process on deciding on drum heads. I wouldn't use hydraulics for every day use...
