For anybody interested:
250g caster sugar
150g self-raising flour
Almost 1 small pot cream
4 medium eggs
50g cocoa powder
1 tsp baking powder
1 tsp vanilla essence
350 ml whipping cream, beaten to stiff peaks
200g melted chocolate, folded into the cream
strawberry jam for spreading on the "sandwich" sides of each caek to stop them going soggy.
2 x 20cm sandwich tins. Bake caek for 25-30 mins @ 180 degrees.
