I was interested in checking out the Tune-bot, but there was no way I'm going to throw down a hundo on it. Instead, I downloaded an app called iDrumTune. Only 4 bucks. I don't know if it was better...

Your ears are the best tuner. The drumdial will measure tension, which will only get you relatively close, but not in perfect tune. Tune-bot and smartphone apps like it can get you to the Hz.

If you feel that the music that you are playing can sound good on a 3 piece kit, go for it. Some music only requires a 3 pc, others need (or sound better) with much more.

You might want to double check the bass drum size for the DW set. 23x18 doesn't seem right to me. Good luck finding heads for it if it is indeed that size.

Not sure about "tastefully overplayed", but Nicko McBrain is one of my favorite drummers. He is pretty busy, but I can't imagine hearing Iron Maiden songs with Phil Rudd sitting in.

I'm the opposite. I miss the 7 and 9 piece double bass kits. I miss the power toms and bigger tom sizes in general. Give it another 10-20 years and it will probably cycle back around.
