You know this by knowing the structure of the song. Here's a jazz song, there are two parts of it:

A - 8 measures
B - 8 measures

Most of the time, the A section is played twice. That makes 16...

Yes: Zildjian cymbals. I've been playing Zildjians since 1969. I can't even think about playing anything else. I don't even look at or try other cymbals, seriously.

I'm not at all sure what a 6/8 basic blues beat means. Are you sure it isn't 12/8? Anyway, going on what you've written here, why not just write it in 16th notes? Why change the time signature?...
