Groove Essentials is probably a better source than the other one you found...
The book comes with mp3s, the video doesn't, unless you buy them bundled.

Years ago, I remember it was difficult to find entry level sets for children/students, with a 20" bass drum and normal size toms (instead of power toms).

Practice method 3 is doubling the notes that are not accented, so no problem with patterns that have accents, you just double the other notes.

About the tempo, Blackley advocates practicing slowly...
