I have Catalina Ash as well. I struggled with the snare until I put Evans Genera Dry on it. Medium tension with high on the resonant and now I don't mind it at all. I do have other snares...

I have 20x18 kick drum with Evans EQ2 batter, EQ1 resonant, kick port installed and just a tinny bit muffling, similar to what Simon Philips does. I don't have any issues with the volume from it.

I got the kit used and unfortunately didn't check the edged before hand. Yah, lesson learned.

I also have Peace DNA and absolutely love it. The sound and the quality are very satisfying for me. It's away better build the comparing to the Gretsch Catalina Ash I have for example....
