I have a 5" maple snare and play it more than my two 6.5" maples. I like the body of the deeper snares but the 5 often sounds cleaner. Crisper.

I don't think it makes any difference.
You can get the required (relative) angle between your arm/wrist and the cymbal whether the cymbal itself is flat or at an angle. Or the drums for that...
