You really want to subdivide in method that fits the feel and flow of the music. For instance, if the backbeats are on the 3rd and 7th beats of the measure, you are not going to want to count 1 - 2...

I wouldn't consider Color My World as 6/8 but rather 6/4. In fact, I wouldn't consider 1/2 the tunes on the Google list as 6/8 tunes. 6/8 implies a certain tempo which is quick and I'm counting it...

Exactly. The difference is entirely the feel and tempo of the song. I could write the same pattern in three different time signatures, adjust the tempo and come up with the same drum pattern.
