When I lived in CO - I would drive two hours to go to Rupp's Drums fairly regularly. I really miss that shop (I moved to FL).

They always had my Oak 727s and you could usually find something cool...

My very humble and uneducated opinion would be go Catalina Maple. If for no other reason than you're getting a 100% maple kit, as opposed to poplar, at an intermediate/entry level price.
