I prefer 1 up 2 down because I can't fit 2 toms up top without having the hats uncomfortably far away IMO. My 24" Giant Beat doesn't help either.

The notes that are on the inside of DW drums are different on each drum because each piece of wood that each drum is made of is a different. The note that is in yours most likely will be different...

Pearl also revamped their hardware lines so that every cymbal stand has a non-geared tilter. All unilock or gyrolock.

I've never been told to stop hitting things in my local small chain (3-4 stores around the area). In fact, I've been told the opposite. I was in the store testing snares after I had gotten off work...

You also can factor in the fact that in the case of Gretsch and GMS, they may source their shells from Keller, but order specs that are not available to the general public.

One or two applications of Tung oil a year should keep the interior looking really nice and won't have a noticeable effect on the sound of the kit.
