I put ankle weights on my wrists and it FORCED me to be economical. Even taught me to use rotation of my wrist and general finger usage with much more power than I thought either could do! Also...

Defining part of your song as different from the rest is a great way to learn(you could refer to it as an etude)...

Quantization has no place in my playing.

Working on my timing, playing ahead/on/behind(what I like to call predicate playing) the beat as I dynamically determine certainly does.

You could consider wearing noise cancelling headphones over your in ear monitors.

Some brands will accept input from line...so you could take an equalized feed into the noise cancelling headphones...

Yeah...learning to be comfortable with 'the cringe factor' is deeply important when listening back...its the only way to isolate the components of your planning that you want to make the biggest...

Timing...dynamics...tuning...differences between keeping the stick on the head vrs playing far more staccato WHEN I INTEND IT...how the sounds from outside were changing the sounds I was...

I think that micing technique is dictated by the space....not as much by the set...in most cases.

Some places need close micing to defeat transients(sometimes not even made by the band)...some...
