Ok, so I've noticed in some songs(namely by metallica or mastodon) where the drummer will continue the fill into the next bar and then just pick up the groove again on the first snare note(for a groove where the snare comes on 2 or 3).
I have been practicing these and they are fun and a little bit challenging at first to stay on count.

What would you call these fills?

there are alot of fills that and on two's and three's, and that's their name - fills that end on two or three.
their common in almost all styles of playing, not only in metal.


and yes, they are a-l-o-t of fun once you get it. keep practicing.:]

As far as i know they're just called "playing over the barline" because as Jeff said, they cross the barline.

Absoooolutely. I play these over the bar fills alot in triplets in the vein of him and bill ward. I just like the way it feels playing like that.
