i've attempted to put new wires on my snare and i just can't get the damn things tight enough. i guess it's a 2 person job as i don't have 3 hands to hold both sides plus tie the strings on. they're on evenly (not veering towards one side or the other) at least, haha.
is this really the way to do it easiest and if not, what is?

loosen your strainer down to nothing then put them on and tighten the stainer to its regular tightness.
also visegrips on the strings, belts, etc. really help cutting two things to hold down to one.

Flip the snare handle down and loosen the screw to about 1/4 of tightness. Put the butt end on first with the snares centered on the bottom head. Then put on the snare release side tight but not extremely tight. Then Close the strainer and tighten the screw as necessary. Good luck.

It sounds like you're trying to put the snare wires on at full tightness............follow the advice given and you should be fine. It's definately a one man job.............you'll get it down soon.
