what are the main differences between these woods?
which one would be closest to beechwood, if any?

Beech is lighter and dryer than maple, sonically between maple and birch.

I have both a birch kit and a bubinga kit. The birch kit is a bit brighter and louder. Great tone. The bubinga is very warm. I have an oak snare (Yamaha) that is very loud (maybe because it's a 7x14) but still warm.
