Not to spam the boards but two products come to mind that I have personally used and recommend.
1 - Pat Petrillo's Roots of Groove. Great book!

2 - Turn It Up play along CDs by Spence Strand. Great guy (drummer) and excellent CDs. I was playing along to one this morning.

I have both of the products Shane mentioned, they're excellent. Also, a great book with a lot of shuffles and other great grooves is Mel Bay's Complete Modern Drum Set by Frank Briggs. I have the DVD and book...it's great.
AND another great book - The Drummer's Bible. Tons of grooves (including shuffles) and the accompanying CD makes it much faster & easier to work through the book.

I have one of Dave Hassel's drum books (the seccond one) and i think it has a few shuffles in there. Im not sure on many books, but one of my favourite shuffles is the groove played by jeff porcaro in Toto's "Rosanna". Youtube it if you haven't heard it. There is a dvd where he explains the shuffle and that is pretty good too

The notation for shuffles all looks pretty similar, so I'll just give you some kick-ass songs with shuffles. There's plenty of them in blues and blues influenced rock, but here's some off the top of my head...
Texas Shuffles (or similar)
ZZ Top - Tush, La Grange, Bar-B-Que, Arrested For Driving While Blind
Stevie Ray Vaughan - Pride & Joy, Say What, Cold Shot, Empty Arms
The Yardbirds - Got To Hurry, Smokestack Lightning
Eric Clapton - Before You Accuse Me, plus most of his stuff from the old-school blues albums like "Me & Mr Johnson" which is all Robert Johnson songs
Clutch - One Eye Dollar, Electric Worry
Van Morrison - These Dreams of You
Rolling Stones - 19th Nervous Breakdown, Casino Boogie, Sweet Virginia
INXS - Mystify
Stevie Wonder - Higher Ground (Chili Peppers also do a cover of this)
Bob Dylan - It Takes a Lot to Laugh It Takes a Train To Cry, Ballad of a Thin Man, Highway 61 Revisited
The Doors - Roadhouse Blues
Queens of the Stone Age - God Is In The Radio
Half-time shuffles
Led Zeppelin - Fool in the Rain
Toto - Rosanna
Steely Dan - Babylon Sisters
Primus - Natural Joe
Also worth note is Van Halen's 'Hot For Teacher' which has a double kick shuffle.
