I'm trying to figure out whether I can mount my 16" and 18" floor tom to my gibraltar rack, or if I should get a pearl T200 tom stand and mount them both to that. Aside from the cymbals on the rack there is hardly any weight on it. I'm also trying to figure if I do use the rack the best way to mount them to it. I have a rims mount for the 18 and I'm trying to get one for the 16. There are a lot of different ways to do this I'm just looking for opinions.

You shouldn't have a problem using a RIMS mount to mount them to the rack other than the possible weight issues.
Why do you want to mount them to the rack? If it's to increase resonance you can get a RIMS Floor tom cradle, that will help, or get some firm pieces of foam and put them under the floor tom legs. Bob Gatzen has a video on youtube where he does this and it dramatically increases resonance.

believe it or not, the main reason is so that I don't have to carry the legs along with me. Just clamp the drum into the rack, or another stand, and play. I love the ease

That makes sense to me. I have a suspended floor tom to minimize points of contact with the floor, but I suppose it also reduced hardware mass a bit, although three floor tom legs aren't a huge amount.
